Pickling Olives

 
 

 

 
 

(A) 1 pkg lye to 5 gal water (4 tbsp to 1 gal)

(B) 1 pkg lye to 8 gal water (2 t. to 1 gal)

A. Let olives lie in (A) bath about 3 hrs.

Wash & stand in water for several hrs.

B. Let lie in B. bath about 1/2 day

Wash & stand in bath of clear water 1 day.

Wash again.

Stand in bath of salt water next day. About 4 tablesp. salt to 1 gal water.

Continue till all lye is clear from olives (about 10 da or 2 wks)

Then can in brine.

About 10 oz salt in 1 gal. or 1 cup salt to 9 of water.

The lye must penetrate to the stone.
